Winter sunshine soup recipe.

Winter is a time to nurture and nourish yin.

To protect our bodies from the cold by staying warm and eating seasonal fruit and vegetables, well cooked and nourishing soups, broths and stews and drinking plenty of water or herbal teas.

Ingredients
3/4 cup - red lentils rinsed and soaked
2 cups - bone broth or vegetable broth
1 x 5 inch piece - Kombu soaked
1 - leek sliced
2 - roughly chopped carrots
1 tablespoon - grated ginger
1 tablespoon - coconut or olive oil
1.5 cups - pumpkin or sweet potato
1/2 cup - parsley chopped
2 teaspoons - miso paste
salt and pepper to taste
Optional : chili flakes and garnish of your choice

Method:
Cook onion and ginger in a tablespoon of coconut oil or olive oil until soft.
Add drained lentils, carrots, pumpkin, bone/veggie broth and kombu, top up with water to cover if needed and bring to the boil. Reduce heat and simmer with the lid on for 30 minutes or until lentils and veggies are soft. Add miso paste then blend with a stick blender and add parsley.
